Vegan Eats: Holiday Eggnog

Holiday Eggnog

Ingredients

Cashews: 1 cup + 2 tbsps
Dates: 9
Water: 2 3/4 cups + 1 tbsp
Nutmeg: 1 tsp
Cinnamon: 1 tsp
Salt: 1 1/2 pinches
Maple syrup: 1 tbsp + 2 tsps
Vanilla extract: 1 tbsp + 2 tsps
Canned coconut milk: 1 cups + 2 tbsps

Directions

  1. Soak the raw cashews and dates submerged in hot water for at least 1 hour or in cool water overnight.
  2. Drain the cashews & dates and rinse.
  3. Add all ingredients to a high speed blender and blend until very smooth and creamy. Add more water if you like your eggnog a little less thick.
  4. Serve chilled or over ice, top off with another dash of nutmeg and enjoy!
  5. Note: If you’re making it for later, the eggnog will thicken up a bit in the fridge, so you may need to add a bit more water to reach desired consistency when you take it out.
